Matcha Cookies
Ingredients
-1 ¾ cups all-purpose flour
-2 tablespoons matcha green tea powder
-½ teaspoon baking powder
-¼ teaspoon salt
-1 cup unsalted butter, softened
-¾ cup granulated sugar
-1 egg
-1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, matcha powder, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
4. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
5. Gradually add the dry ingredient mixture to the wet mixture, mixing until a dough forms.
6. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.
7. Once chilled, remove the dough from the refrigerator and roll it out on a lightly floured surface to a thickness of about ¼ inch.
8. Use cookie cutters of your choice to cut out shapes from the dough and place them on the prepared baking sheet.
9. Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden.
10. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
11. Once cooled, you can enjoy the matcha cookies as is or decorate them with icing or powdered sugar if desired.
12. Store the cookies in an airtight container to maintain their freshness.
